Foss Marai TILIO is an exceptional zero-dosage (pas dosé) sparkling wine, sourced directly from the "Club dei Saggi" —an exclusive selection that guarantees the uncompromising top quality of Foss Marai sparkling wines. TILIO is a prime example of the house's excellence and innovative spirit, and is aimed at particularly discerning connoisseurs. This natural Extra Brut impresses with its crystal-clear precision, finesse, and elegance, which are palpable in every bottle.

TILIO is created from a careful selection of Chardonnay grapes and a variable amount of Bombino Bianco , a noble grape variety that lends the wine its distinctive aroma and structure. The key to this cuvée lies in its exceptionally long aging period: the second fermentation takes place over an impressive nine months – a rare mark of quality that gives TILIO its luxuriously fine perlage, depth, and remarkable complexity.

In addition, a slow fermentation process using a specially developed Foss Marai yeast, created exclusively for TILIO, maximizes subtle finesse and refinement. The complete absence of added sugar ( dosaggio zero ) allows the natural freshness and purity of the grapes to unfold in their purest and most authentic form.

TILIO is produced using the traditional Charmat method, in which the second fermentation takes place gently in stainless steel tanks. What makes it special is that TILIO matures for an exceptional nine months during this second fermentation – a rarity that gives it its impressive depth, finesse, and exceptionally creamy bubbles.

This long fermentation period not only preserves the grapes' aromatic clarity but also allows them to develop a complex and elegant structure. Thanks to Foss Marai's long-standing expertise and continuous pursuit of perfection, a sparkling wine of remarkable precision and refinement is created.

The complete absence of added sugar underlines the freshness of the wine and ensures a crystal-clear, unadulterated taste experience.

Since 1986, Carlo Biasiotto and his family have been the heart of Foss Marai, a symbol of quality Prosecco.
