The grapes are harvested by hand in the first ten days of September to preserve their quality. After pressing, the must is immediately separated from the pomace to avoid undesirable color and tannin transitions. Fermentation takes place at 17°C with special yeasts from Foss Marai. Foaming takes place in autoclaves for 30 to 40 days, with the addition of sucrose and selected yeasts to give the product its unique characteristics.
